This turned out really great. We put some cherry tomatoes, prosciutto, garlic, oil, and thyme in a tray on the bbq and let it roast. Added some basil near the end of the roasting time. Then, we crushed that all up into a sauce. We added some fresh chives on top. Super good.

    That looks really good!, do you have a recipe for the Gnocchi? Ive been wanting to make some and yours looks amazing :)

      Thanks! Sadly, I do not have a recipe–we just use a basic potato and flour recipe like any gnocchi. I think it’s more about technique. We just use a basic gnocchi recipe (make mashed potatoes with a potato ricer to remove any chunks) and then once the potatoes are cooled, we add flour until we get the desired texture. Some people use eggs in the mixture but I don’t think I did for this recipe (though a yolk couldn’t hurt). Then we roll it out into a long snake and chop them into equal parts (we roll it thinner to make more of a ‘mini’ gnocchi because we’re lazy). We don’t use a fork or anything, I honestly just roughly roll the pieces into small balls lol. We’ve also had great results with mini storebought gnocchi but i do prefer homemade.

    They look great! Italian here, you get a pass. Be proud. I don’t browse this community THAT often but this is the first really appealing dish I’ve seen in here.
