The gluten free pasta is likely it. I use a ton of pasta water when making these dishes and the cheese dissolves into the sauce.
Try mixing in a little potato starch slurry into the pasta water after the pasta is cooked and see if that helps.
My process…place chicken skin in frying pan flat over medium heat. They release their own oil to fry them. They’ll release from the pan when they are ready to flip, but they will almost fry completely crispy by that point. Drain on paper towel, season with salt immediately out of the pan. You don’t need to do anything fancy to get nice crispy chicken cracklings. And you get smaltz out of the deal too.
For some of us, rather than an echo chamber, it’s just validation of our experiences and learning the language to describe abuse. You can’t get help unless you know what you’re getting help for. And when you learn to recognize gaslighting and manipulation, you can begin to counter it.
