Yeah, you take a sharp knife and cut the head in half lengthwise. Then steam. I know there’s lobster sushi as well but I’m not sure how it’s butchered.

It’s a chocolate croissant with almonds. They probably used cacao powder in the dough.
Might depend on how strict you are though there’s a lot of fish sauce used in Thai/Vietnamese cooking
