Alright, so then please help us out. What you are particularly criticizing about the the dish and what would in your opinion be the way to prepare it correctly / like you grandma would.
I just want to point out that this is a dogma. Maybe “Scaloppini di Mare e Terra” is an italo-american invention? I just googled quickly for Italian food with seafood and meat in it. In many cuisines around the world people have been preparing and eating meat and seafood in the same dishes for centuries and it is absolutely normal.
What interests me is what do you personally believe is bad about combining meat and seafood in the same dish? Do you find the taste disgusting? Do you believe it is unhealthy or even dangerous? Since so many cultures eat the combo almost daily, disliking it obviously comes from your personal believes.

Never met my grandma.
You don’t put fish and meat together.
That is a very dogmatic position - even for an Italian. So Italians must hate Paella and … especially Scaloppini di Mare e Terra.
paella is not italian, you can do whatever you want.

I’d say so since “scaloppini” is not an Italian word.

No I think it’s fine. Just don’t try to call that dish Italian.
